On WBEZ: In the Time of the Manly Oyster

Unlike the petite cocktail oysters most fashionable in today’s oyster bars, the oysters at the ubiquitous oyster taverns of 19th century Chicago were big, beefy–you might even call them manly. Hoping to re-introduce that style of oyster again, one Chicago seafood distributor claims they may even have helped fuel the firefighters who battled the Great Chicago Fire of 1871.
